This a recipe that is straight from Puerto Rico.  I grew to love it, it is extremely unique and because of the ingredients possibly difficult to even make.

Green Bananas in Garlic and Onion Sauce (Guineitos en escabeche)

 

8 - 10 green bananas peeled

2 garlic cloves crushed

1 large onion

¼ cup olive oil

10 stuffed olive cut in half

2 tablespoon white vinegar

1 bay leaf

1 tablespoon lemon juice

Ground pepper and salt to taste

¼ red bell pepper sliced thin

 

Boil bananas for 25 minutes or until tender but firm. Do not over cook. In a skillet at medium low heat sauté the rest of the ingredients for 5 minutes or until the onion and peppers are tender. Remove from heat and let it cool. When the bananas have cooled, cut them in small rounds, put them in a glass bowl and add the onion sauce and stir. Can be served warm or cold. If you like chicken gizzards (mollejitas), cook some until tender. Cut them in small pieces and add to the bananas.
