Hawaiian Sweet Potatoes by Kathy Hess-Martin

 

5 - 6 medium sweet potatoes

1 1/2 cup flaked coconut

1 1/2 tsp brown sugar

1/3 cup light cream

3 Tbsps melted butter

 

Cook washed, unpeeled sweet potatoes until done.  Remove skins and mash.  Stir in 1 cup coconut, brown sugar and cream.  Beat until light and fluffy.  Pour mixture into buttered casserole dish.  Mix butter and remaining 1/2 cup coconut.  Sprinkle this on top of sweet potato mixture and bake, uncovered at 350 for about 20 minutes until coconut is lightly browned.
